Our 2013 Monterey Cabernet Sauvignon opens with tempting aromas of blackberry, plum, and allspice. Alluring flavors of ripe, red berries and tasty notes of blackcurrant and pepper envelop the palate and lead to an elegantly smooth finish.
The 2013 vintage across Monterey was an ideal growing season with the perfect conditions for bloom and fruit set. A dry winter led to a mild spring and cool summer. The extra summer fog and cloud cover allowed for an extended growing season resulting in excellent flavor concentration, good acidity, and structure.
The grapes for our 2013 Cabernet Sauvignon were selectively harvested during the early days of November. The wine underwent a 3 day cold soak followed by a 14 day fermentation after which it was left on skins for an additional 5 days. The wine was then aged with a combination of stainless steel and French oak, 10% new.
